Process & Profile

Crafted in the remote Oaxacan village of San Jose Rio Minas, this mezcal is a small-batch ensemble blend of three agave varieties: Espadín, Arroqueño, and Mexicano. Each agave type is harvested at peak maturity, roasted in earthen pit ovens fueled by wood, stone-milled (tahona) to release the sweet fibers, and naturally fermented in open-air wooden vats using wild yeasts. The spirit is then double-distilled in copper alembic stills. The combination of agave species produces a layered, balanced profile that reflects the terroir of the high-altitude, mineral-rich region.
