Del Maguey Ibérico is an extraordinary small-batch mezcal made in Oaxaca, Mexico, following the traditional pechuga method. This unique variant uses Jamón Ibérico de Bellota instead of the customary chicken breast in its third distillation. During this stage, the finest slices of Ibérico ham, along with seasonal fruits, nuts, and spices, are suspended in the still above the mezcal vapors. The process infuses savory, nutty, and umami-rich notes without imparting a direct meaty flavor. The base spirit is produced from 100% Espadín agave, roasted in underground stone pits, fermented naturally, and double-distilled in copper alembics before the final Ibérico-infused run.
