Del Maguey Pechuga is an artisanal mezcal crafted in Oaxaca, Mexico, following centuries-old traditions. This special expression is distilled three times, with the third distillation including a raw chicken breast (pechuga), locally harvested fruits, and spices suspended in the still. This unique process infuses delicate layers of flavor into the mezcal without imparting a meaty taste, resulting in a complex and festive spirit often reserved for celebrations. The agave used is Espadín, roasted in underground pits, naturally fermented in wooden vats, and distilled in small copper alembics.
